In the real world, the Janissary was a member of the elite infantry units that served the Ottoman Empire, composed of non-Muslim children, mostly Christian, who were kidnapped and forced into joining Islam and serving as slave-soldiers to the Empire. In the world of Dungeons & Dragons 3rd Edition, the Janissary is a Variant Class for the Fighter tucked away in the pages of Dragon Magazine #334. In fact, calling it a Variant Class is kind of a stretch; it's really more of an article about purloining the lore of the Ottoman Janissaries and plopping it into your fantasy world, with some advice on appropriate skills, feats and roleplaying behaviours. Literally the only mechanical difference between the two is that the Janissay loses access to Handle Animal, Intimidate and Swim as class skills and instead gains Speak Language and any two Knowledge skills of their choice as class skills. That's it. That's everything. And it's not like fighters were exactly a Skill Monkey class in 3e to begin with!
