The 5e went with the tiny horseshoe crab and a jellyfish hiding in corpses aesthetic than a viscera look.
They have a symbiotic relationship with the [[Carrion Crawler]], where the Stalker won't infect them in exchange for the  Crawler not eating the corpse they called dibs on and spreading their larva around.

Carrion Stalkers are one of the many hideous monsters native to the Ravenloft setting of Dungeons & Dragons. Resembling a cross between a horseshoe crab and a jellyfish, colored so that it looks like an exposed ribcage nestling over decaying entrails, they are a race of scavenging vermin, feeding on corpses and attacking living creatures that draw close in order to create more corpses upon which to feed and nurture their grubs. They may have been inspired by the Facehugger from the Alien movies.
